Ingredients
- -1 (2 ½ pound) butternut squash, peeled, seeded, and cut into small cubes
- -3 Tbsp olive oil, divided
- -1 tsp salt, divided
- -½ large spanish onion, chopped
- -2 cloves garlic, minced
- -1” piece of ginger, minced
- -½ Tbsp curry powder
- -1Tbsp fresh turmeric, minced
- -6 cups organic vegetable broth
- -½ cup organic coconut milk
- -1 lime, juiced
- Garnishes: finely chopped honeycrisp apple, toasted pumpkin seeds, coconut milk
Instructions
- 1. Preheat oven to 425. Place squash cubes in a bowl and drizzle with 1 ½ Tbsp oil. Season with salt and pepper and toss with your hands. Spread out onto a baking sheet lined with parchment paper. Bake for about 35-45 minutes until tender and golden. Roasting the squash imparts a sweet caramelized flavor to the soup.
- 2. Heat a saucepot or dutch oven over medium heat. Add 1 ½ Tbsp oil then add onions and cook for 5 minutes, stirring occasionally. Add garlic, ginger, curry powder, turmeric, and salt to taste and cook for 1 more minute. Add roasted squash, vegetable broth, and coconut milk and bring to a boil. Reduce heat and simmer for 15-20 minutes, stirring occasionally. Season to taste with more salt if necessary.
- 3. Turn the heat off and stir in the lime juice
- 4. Use an immersion blender to blend all of the soup. Add more vegetable broth or water to thin if necessary. Alternatively, blend the soup in a blender in 2 separate batches until smooth.
- Garnish each bowl of soup with diced apples, pumpkin seeds, and coconut milk.
