Ingredients
- -1 ½ pounds fresh green beans
- -1 red bell pepper, organic
- -1 yellow bell pepper, organic
- -1 (15-oz) can garbanzo beans, organic, BPA free can
- -3 oz feta cheese, pasteurized crumbled
- -3 Tbsp fresh parsley, minced
- -3 Tbsp walnuts or almonds, toasted and chopped
- -1/4 tsp Dijon mustard
- -2 Tbsp red wine vinegar
- -Extra virgin olive oil
- -1/2 tsp salt
Instructions
- 1. Cut bell peppers into four large slices, discarding the seeds. Toss with a little olive, salt and pepper. Roast at 425° until tender and lightly charred, about 25 minutes. Cool, chop, and add to a large bowl.
- 2. Meanwhile, bring a large pot of salted water to a boil. Trim green beans and cut into halves, on the diagonal. Blanch in salted water until just tender, about 2 minutes. Shock in a large bowl of ice water. Drain well and spread out on a towel to dry. Pat dry and add to the bowl with the peppers.
- 3. Rinse and drain the chickpeas. Pat dry. Add to the bowl with green beans and roasted pepper.
- 4. Add in the feta, parsley, and walnuts.
- 5. In a small bowl, whisk the Dijon with the red wine vinegar. Slowly whisk in 4 Tbsp of the olive oil and season with salt and pepper. Toss all ingredients with the vinaigrette and serve at room temperature.
Notes
- *Never buy pre-crumbled feta. It has unnecessary additives and preservatives to keep it fresh. Simply purchase fresh pasteurized feta, and organic if possible. It's easy to crumble on your own.
