Ingredients
- Vanilla Cashew Cream (can substitute 1 cup plain Greek yogurt if you prefer)
- -½ cup raw cashew butter (or 1 cup raw cashews soaked overnight and drained)
- -¼ cup water
- -1 tsp. vanilla extract
- -1 Tbsp. pure organic maple syrup
- Grilled Peaches
- -4 ripe organic peaches
- -1 Tbsp. extra virgin olive oil
- -½ tsp. cinnamon
- -1/2 cup cinnamon paleo granola (PALEONOLA and PALEO KRUNCH are both great)
Instructions
- 1. Prepare the cashew cream. In a food processor or blender, combine the cashew butter, water, vanilla and maple syrup. Alternatively, you can process soaked cashews with ¼ cup plus 2 Tbsp. water, vanilla and maple syrup. Set aside.
- 2. Prepare the peaches. Preheat the grill to medium. Cut the peaches along the seam all the way around and twist halves off the pit (or just slice the cheeks of the peach off). Drizzle peaches with enough olive oil to lightly coat and and gently toss. Cook, cut side down, on a hot grill until fruit has grill marks, about 1 to 2 minutes. Turn over, and move to indirect heat. Sprinkle cut sides lightly with cinnamon. Cover grill and cook until fruit is tender, about 5 more minutes. Serve with cashew cream (or Greek yogurt) and paleo granola.
Notes
- Purchasing pre-made paleo granola helps save time in the kitchen and keep you off your feet. I like the paleo granola because it is high in protein and made with coconut oil instead of canola oil. Most traditional granolas have canola oil in them, which is toxic and important to avoid.
- To save even more time, top the peaches with the yogurt instead of cashew cream and presto, dessert or breakfast is ready.
