Wet ingredients
- -1 ripe banana, mashed
- -¾ cup almond butter, organic, no additives
- -¼ cup melted coconut oil
- -⅓ cup honey, raw an organic
- -1 egg, organic, beaten
Dry ingredients
- -2 cups rolled oats, organic and gluten-free
- -½ cup dried blueberries, no sugar added
- -¼ cup sunflower seeds
- -¼ cup hemp seeds
- -¼ cup ground flax
- -½ cup sliced almonds
- -1 tsp. cinnamon
- -½ tsp. pink Himalayan salt
Instructions
- 1. Preheat the oven to 350° F. Mash the banana with a fork and combine all the wet ingredients until smooth.
- 2. In a separate bowl, evenly mix all of the dry ingredients. Add the dry to the wet and form into 2 ½” cookies on a parchment lined tray. The cookies do not run or rise so form them into the proper shape with the back of a spoon.
- 3. Bake for 20-24 minutes until golden. Let cool for 30 minutes to firm.
