Ingredients
- -5 ripe organic peaches (at least 1 very ripe peach)
- -1 Tbsp lemon juice
- -4 dates, soaked and 5 dried dates (not soaked), chopped
- -dash cinnamon
- -1 cup of walnuts (or pecans/almonds, or a mix)
- -pinch cinnamon
- -pinch salt
Instructions
- 1. Select the ripest peach and cut into chunks, removing the pit. Place in a food processor or small blender along with the lemon juice, soaked dates, and cinnamon. Process until a smooth sauce.
- 2. Chop the remaining 4 peaches into ½ inch pieces and place in a bowl. Toss the pureed sauce over the peaches until evenly mixed.
- 3. Make the topping. Place the nuts, dried dates, cinnamon and salt in a small food processor and process until they form fine crumbles.
- 4. Place some of the nut mixture at the bottom of a bowl or mason jar, spoon the peaches over it then top with remaining nut mixture.
Notes
- *Make sure to always chose organic peaches. Peaches are on the dirty dozen list and have some of the most pesticides on them compared to other fruits.
