Ingredients
- -1 cup puffed brown rice
- -1 cup rolled oats
- -⅓ cup sliced almonds
- -¼ cup unsweetened shredded coconut
- -2 Tbsp hemp seeds
- -2 Tbsp chia seeds
- -⅓ cup almond butter
- -⅓ cup honey
- -2 Tbsp coconut oil
- -½ tsp salt
- -½ tsp vanilla extract
- -½ cup dried goji berries
Instructions
- 1. Preheat the oven to 350 degrees F.
- 2. Combine the puffed rice through the chia seeds in a large bowl and toss to combine.
- 3. In a small microwave safe bowl, combine the almond butter, honey, coconut oil, and salt. Microwave for 1 minute or until bubbly. Quickly stir in vanilla extract. Pour over oat mixture and toss to coat thoroughly.
- 4. Pour mixture onto a large sheet tray lined with parchment paper. Pack down with your hands. Bake 10-15 minutes until golden and crunchy, stirring with a spatula 1-2 times during the cooking process.
- 5. Remove from oven and crumble into clusters. Toss in goji berries and let cool.
